Sourced from Granja Paraiso 92, one of Colombia's most celebrated and innovative farms, this Red Bourbon lot is processed through a 48-hour whole cherry anaerobic fermentation before being washed and carefully dried. The result is a cup that is rich, layered, and genuinely exciting from first sip to last.

Expect tasting notes of plum, blueberry, rose, ginger candy, and lemon. It brews beautifully as a pour-over, filter, or espresso, bringing something different to the cup no matter how you make it.

How It's Decaffeinated

This coffee is decaffeinated using the Ethyl Acetate method, derived from Colombian sugarcane. The natural EA process gently removes the caffeine without high heat or high pressure, preserving the sweetness, floral character, and complexity that makes this lot so special. You get all the craft of a precision-processed natural coffee, with none of the caffeine.

About the Farm and Producer

Granja Paraiso 92 is the creation of Wilton Benitez, a producer with over 26 years of coffee experience spanning growing, roasting, and processing. Wilton personally designed all the farm's equipment and machinery, and oversees a highly controlled fermentation process using bioreactors and specific microorganisms, with constant monitoring of temperature, pH, brix degrees, and conductivity. Every variable is tracked, every profile is intentional. The farm's drying machines run without fossil fuels, keeping the operation as clean and sustainable as the coffee it produces.
