The Science
Why Decaf?
Decaf is a great choice if you love the taste and ritual of coffee, but want less caffeine in your day. Many people reach for decaf to support more consistent sleep, reduce jitters or that “wired” feeling, or enjoy an extra cup without overdoing it on caffeine.
And it’s not just about cutting caffeine; coffee offers more than a boost. Decaf still contains many of the same naturally occurring compounds found in regular coffee, including antioxidants and flavour-rich components that make coffee enjoyable.
How the decaffeination process works
Most decaffeination methods follow a similar set of steps:
- Prepare the green (unroasted) beans by adding moisture to gently open their structure.
- Extract the caffeine using a process that selectively binds to or pulls out caffeine (such as water, CO₂, or food-safe solvents).
- Rinse/clean the beans to remove any remaining processing compounds and loosened caffeine.
- Dry the beans back to their normal moisture level so they can be roasted like regular coffee.

How to brew good filter coffee at home.
Different methods will have different recipes. Can select from CHEMEX, V60, or French Press to name a few. There are fundamentals for making a good cup of coffee.
- Weigh your coffee. The dose of your coffee will be the biggest difference between a cafe coffee and a coffee brewed at home. A ratio of 1g of coffee to 16 ml of water. Example: 20 g of coffee for 320 ml of water. Prefer lighter or stronger, can adjust as needed.
- Grind coffee beans before brewing to the appropriate size for the brewing method. A good coffee grinder is important for a good cup of coffee. Arguably, the grind is the most important aspect of a good repeatable cup of coffee.
- Fresh coffee beans. Whole beans will maintain the flavour longer, but having fresh coffee beans will make for a more flavourful cup. Generally, let your beans rest for around 14 days after roasting.
- Water temperature. Try to get a kettle that allows for a 92 to 96 degrees Celsius setting. This will allow for an optimal temperature range for extraction. More advanced methods do exist, but this will make a good cup of coffee.
Quick FAQ
Is decaf coffee really caffeine-free?
No, decaffeinated coffee is not caffeine-free. Decaf contains roughly 2–5 mg of caffeine per cup, compared to 80–120 mg in regular coffee.
Does decaf taste worse than regular coffee?
Poor decaf exists. Decaf roasting is more difficult as the decaffeination process alters the bean structure. High-end, freshly roasted decaf can taste just as good as its caffeinated counterpart.
What decaf method is the healthiest?
All methods are safe and approved by government regulatory bodies. Swiss Water and CO₂ are chemical-free, while ethyl acetate (EA for short) uses natural solvents derived from sugarcane. These are the 3 natural derived decaffeination processes. Learn more at the decaffeination processes blog.
Is decaf safe during pregnancy?
Health Canada supports moderate caffeine reduction during pregnancy. Decaf provides reduced stimulant intake with coffee enjoyment.
