Lights Out is Phil & Sebastian's flagship decaf is a flavourful, well-balanced coffee with a round body and natural sweetness reminiscent of dried fruits. Roasted for versatility, it performs beautifully as both filter coffee and espresso.

Tasting notes: Dried fruit (raisin, fig), brown sugar, walnut, and deep balanced sweetness, round mouthfeel.

Origin: The current lot is sourced from the Garzón region of Huila, Colombia. Huila is widely considered Colombia's premier specialty coffee region — high elevation, volcanic soil, and a long tradition of meticulous smallholder farming produce coffees with the structural balance Phil & Sebastian are famous for.

Process: Ethyl acetate (EA) — often called "sugar cane decaf." A natural, sugar-cane-derived solvent removes 99.9% of the caffeine while preserving the bean's flavour, sweetness, and aromatic complexity.

Roast: Versatile medium roast, dialled in specifically for the decaffeinated bean's structure.
