About the Farm

Granja Paraiso 92 is run by Wilton Benitez, a producer with over 26 years of experience spanning growing, processing, and quality control. The farm uses custom-built equipment, precise bioreactor fermentation, and constant monitoring of temperature, pH, and fermentation variables to produce lots with exceptional clarity and consistency. Drying machines at the farm operate without fossil fuels, making this a coffee you can feel good about in every way.

Brew Guides

Pour over: 21g coffee, 340g water at 93°C, medium-coarse grind, 16:1 ratio. Bloom with 50g for 30 seconds, follow with two remaining pours. Total brew time 2.5 to 3 minutes.

AeroPress: 18g coffee, 280g water at 91°C, medium-coarse grind. Fill at 0:00, stir at 1:10, plunge at 1:15, finish at 1:45.
