Sourced from C.I. Racafe in Colombia's Medellín region, this lot uses carefully selected Caturra and Castillo varieties, fully washed and then decaffeinated using the Swiss Water Process. Roasted to Monogram's Sweet Spot for filter, the result is a balanced and comforting cup with none of the harshness or flatness that can hold lesser decafs back. Just clean, consistent, enjoyable coffee.

About the Swiss Water Process

The Swiss Water Process is a 100% chemical-free method of decaffeination that uses only water, time, and a Green Coffee Extract to gently draw out caffeine while preserving the coffee's natural flavour compounds. It is certified organic and widely regarded as one of the cleanest and most transparent decaffeination methods available.

Brew Guides

Pour over: 21g coffee, 340g water at 93°C, medium-coarse grind, 16:1 ratio. Bloom with 50g for 30 seconds, follow with two remaining pours. Total brew time 2.5 to 3 minutes.

AeroPress: 18g coffee, 280g water at 91°C, medium-coarse grind. Fill at 0:00, stir at 1:10, plunge at 1:15, finish at 1:45.
