Origin: El Vergel Estate, Tolima, Colombia. Run by the Bayter brothers, El Vergel has become one of Colombia's most respected experimental farms known for pushing processing innovation and consistently producing competition-grade lots. Tolima sits in the central Andes, with elevations and microclimates that yield some of the country's most balanced coffees.
Variety: A blend of Red and Yellow Caturra — two heirloom Bourbon-descended varietals known for sweetness and complexity. Combining the two adds layered fruit character that a single varietal would miss.
Process: Washed, then decaffeinated using the Sugar Cane (EA) method. A natural decaffeination technique derived from fermented sugar cane, EA gently removes caffeine while preserving the cup's flavour, sweetness, and aromatic complexity. It's widely considered the cleanest and most flavour-preserving decaffeination method in specialty coffee — which is why a growing number of top roasters favour it over CO₂ or Swiss Water for high-end single-origin decafs.
